One of Blue Skies’ key business strategies is to diversify its products whilst simultaneously enhancing the sustainability of its business model. Given that Blue Skies generates a significant amounts of fruit waste, the focus of the research project was to ascertain the market potential for turning fruit waste into a revenue stream which will not only benefits the bottom line of the business, but also helps reduce their waste and carbon emissions. The research team undertook a value chain analysis of the fruit-waste ingredient sector to ascertain gaps where Blue Skies could offer bespoke products made from fruit waste. The investigation entails an analysis of the key players in the sector and their sizes, relationship among the players, gaps/challenges and opportunities in the sector, cost structure, and where and how Blue Skies can be a key player within the space.
